    ～酒かすてら秘話～

    遡ること40年前。

    現会長（7代目）が東京での修行後、地元に戻り東京で学んだブランデーケーキの様なかすてらを作りたい、そう思っていた時の事。

    地元瑞鷹酒造より当時ちょうど発売されたばかりの大吟醸酒を勧められました。

    飲んでみるとそれはなんともフルーティな香りのするお酒！！これは、このしっとりとしたかすてら生地に合う！と、キメの細かいかすてら生地や酒量の調整など試行錯誤を重ねた末に誕生しました。

    食べた人を魅了するその魔法のかすてらはたちまち口の超えた美食家の間でも評判となり、今では天明堂を代表するお菓子の一つとなりました。

    きめ細かなかすてら生地は季節や湿度により焼き上がりが異なるため、熟練の職人が手掛け、通年通して安定した商品をつくります。

    今でも一つ一つ手作業で返しながら底を除く5面に丁寧に刷毛で大吟醸を含ませています。その手間がこの至極の逸品を作り出すのです。
