  • 今から何年も前の話じゃ、、、

    戦時中の砂糖禁止令がようやく解除された

    昭和24年のことじゃった。

     

    六代目北川初喜は土間の作業場で何やら真剣に考えておった。

    菓子組合員のみに分けてもらえるこの貴重な砂糖をふんだんに使った美味しい饅頭をつくりたい、と。

    よし、中には黄身餡、外の皮に砂糖をまぶそう！

    しかしつけてもつけても焼きあがる時は落ちてしまう

    何度も試作を重ねた末、水で饅頭を湿らせ砂糖をつける事を思いついた。

    いざ焼成の時、期待もそこそこにおそるおそる釜から出してみると、、、

    そこには何とも不格好にヒビの入った饅頭があった。

    しかし！先代はこれを見て凹むどころか手放しで喜んだ。

    〝こっ、こっ、これだぁ～～っ！！なんと美しい！！〟

    〝ヒビの入った外の皮は雲の切れ間、中の黄身餡はそこから顔を出す太陽、この饅頭の風貌はまさしく我が店の屋号ではないか！！〟

    そう、まさしくこれが【逆転の発想】

    先代は迷いもなくこの不格好な饅頭を

    ❛天明饅頭❜　と、名付けた。

    それからは更に日々改良を重ね、水のつけ方、量、湿度や季節による変化に対応しながら美しくヒビの入った今日皆様に愛される饅頭へを日々変化し続けている
